该酒采用优质高粱为原料,大米和95(另有一说为100)味中药制成小曲,小麦加入40味中药材制成大曲,再经酒醅、香醅串蒸后量质摘酒、分级陈酿、科学勾兑、精心包装而成。独特工艺酿制而成的董酒,既有小曲酒的柔绵、醇和、回甜,又有大曲酒的浓郁芳香,评酒专家评定董酒的独特香型为其他香型,将其风格概括为:酒液清澈透明,香气幽雅舒适,入口醇和浓郁,饮后甘爽味长。酒度有 59、54、41、38(命名为“董醇”)、28 度。
The liquor is made from high-quality sorghum, rice and 95 (or 100) Chinese herbs to make Xiaoqu, and wheat with 40 Chinese herbs to make Daqu, which is then steamed in a series of wine spirits and aromatic spirits, then plucked, graded and aged, scientifically blended, and carefully packaged. The Dong jiu made by this unique process has the softness, mellowness and sweetness of Xiaoqu wine, and the richness and aroma of Daqu wine. The unique aroma of Dongjiu is rated by wine experts as other aromatic types, and its style is summarized as follows: clear and transparent wine, elegant and comfortable aroma, mellow and rich in the mouth, and a long sweet taste after drinking. 董酒的酿酒历史十分悠久,《遵义府志》记载,这里的酿酒历史最早可追溯至魏晋时期。及至清末,当地酿酒产业已经很繁荣,而其中最有名气的就是程氏作坊,他们家的酿酒工艺传承数代,所做的小曲酒非常有特色。就在这个环境下,程家又诞生了一位酿酒奇才——程明坤。程明坤虽然才24岁,但他把家族祖传秘方和当地酿酒技艺进行结合,再加上自己对草药的研究,用140种中草药材入曲,研发出了“百草入曲、两小两大、双醅串香”的工艺。自此,中国白酒的一大流派——董香型诞生。
Dongjiu Liquor has a long history of brewing, with theZunyi Prefectural Chroniclerecording that the history of brewing here dates back as far as the Wei and Jin dynasties. By the end of the Qing Dynasty, the local brewing industry was already flourishing, and one of the most famous was the Cheng family's workshop, whose brewing techniques had been passed down for generations and whose Xiaoqu wine was very distinctive. It was in this environment that the Cheng family gave birth to another brewing wizard, Cheng Mingkun. Although Cheng Mingkun was only 24 years old, he combined his family's secret recipe with local brewing techniques, and with his own research into herbs, he used 140 types of Chinese herbs in the bent, and developed the process of "100 herbs in the bent, two small and two large, double spirits in a string". This led to the birth of the Dong Xiang type, a major school of Chinese Baijiu.
抗日战争时期,来董公寺践行实地的教授们认为董酒是"药食同源""酒药同源"真正酿酒起源的传承者。"董"字寓意"百草","董"字本身的文化内涵与董酒的文化内涵具有传奇般的巧合。随即,教授们提议将此酒命名为"董酒",希望董酒继续秉承"药食同源""酒药同源"的人类酿酒真谛、传承发扬"百草之酒"。从此,董酒命名开来,蜚声大江南北。
During the War of Resistance Against Japanese Aggression, professors who came to Dong Gong Temple to practise in the field considered Dongjiu Liquor to be the inheritor of the true origin of brewing "medicine and food from the same source" and "liquor and medicine from the same source". The word "Dong" means "hundred herbs", and the cultural connotation of the word "Dong" itself is a legendary coincidence with that of Dongjiu. The professors then proposed naming the liquor "Dongjiu" in the hope that Dong would continue to uphold the true meaning of human winemaking as "medicine and food come from the same source" and "wine and medicine come from the same source" and carry forward the "wine of a hundred herbs". Since then, Dong Wine has been named "Dongjiu" and has become famous in China.

董酒自1957年恢复生产以来,使用的商标共改变了5~6次,有“金鼎”牌(俗称“董公寺”牌)、“湘江”牌、“红城”牌,再到现在使用的“董”牌。外销董酒则使用“飞仙”牌(即“飞天”牌)。
